This apricot and chickpea tangine is a quick and easy recipe which uses cupboard ingredients resulting in a wholesome and healthy filling meal. Great when you are short of time or unable to get to the shops.
1 red onion – diced
3 garlic gloves, or use garlic powder or easy garlic.
1 tsp turmeric
1 tsp curry powder
100g dried apricots – chopped
1 x 400g tin chickpeas
1 x 400g tin chopped tomatoes
500ml veg stock
1 sliced pepper or you can use courgette
Fry chopped onion, garlic and spices in a little olive oil till soft.
Add chopped apricots and pepper and stir through.
Add drained chickpeas, chopped tomatoes and vegetable stock.
Simmer for 10-15 minutes.
